I never use the passive tone pot, and onstage I like to adjust the amount of overdrive using my guitar's volume knob. What I'd like to do is to get rid of the tone pot, make it an additional volume pot, and put in a switch to toggle between the two volume pots (on a 1-pickup guitar).
That way I can switch from volume 10 to whatever lower volume I like, instantly, and hit the same mark every time.
I'm new to guitar wiring. Any advice on the basic approach to this?

I would use a Double Pole Double Throw switch to switch between the volume pot wipers with one pole, and switch between the volume pot input terminals with the other pole.
This way, only one volume pot will be loading the circuit at any given time.
You didn't specify the type of guitar, so you will have to decide on which type of switch that you want. If you can easily add a separate mini toggle switch, fine. If you cannot, consider a push pull pot for one of the volumes. It would select between either volume pot. If you use a push pull pot for the other volume as well, you could have it select between two fixed tone settings.

Toggles are good for a quick flick mid-song, maybe easier that push-pull. Another option to consider would be to have just the one volume control, keep the tone control, and have a toggle to switch between max volume and whatever the volume pot is set to.

...have a toggle to switch between max volume and whatever the volume pot is set to... whether or not the tone control is kept, i like this idea. set the amp and/or pedal(s) for the 'mean' with the toggle switched to max. then switch to normal, and dial down the guitar volume control for the 'clean'. should be real handy. unk
