Hi, welcome aboard! I dunno, how hard do you pluck the strings? ;D ;D Guitar pickups put out tens to hundreds of milliVolts AC. 1,000 milliVolts equals 1 Volt. See tag line below!

Oh, ok thanks! So I should just be able to plug this into my amp and start playing, no grounding or anything?

Well the Squire '51 is not very far off from that using the neck pup, it only has a volume control, no tone, and no caps, just switching (it has grounding).

OK, so maybe it's plug 'n pray.
Since we don't know anything about this guitar (or even if it exists), it's difficult to say.
Unless the guitar is made out of metal, or has a metal pickguard, not grounding the strings will isolate the operator from any connection to the amp (it's not noise-free mind you) unless any metal part of the guitar is in electrical contact with the pickup wiring (such as a Strat jack plate).
........After all, while guitars may be one of the vehicles of electrocution (often pursuant to a mic liplock), they are not the source thereof.

I can't properly "read" the question anyway. What depth do we dive to at this point?

...What depth do we dive to at this point? don't matter to me, as long as it ain't headfirst into 3 feet of water off a 12 foot high bridge. (how's that for some imagery to make ya cringe.)

Thanks for all the replies, after the advice from this thread I've decided to go ahead and use this configuration for my first lap steel build. I'm using this configuration because it is the easiest and I want to make this lap steel as cost effective as possible. The lap steel won't be made of metal, and won't have need of a pickguard (metal or plastic), so from what I've read it would appear that this is safe to "plug'n'play", which is exactly what I was aiming at.
