I've been looking at this diagram: static.zoovy.com/img/guitarelectronics/-/wdu_hss5l11_02...and pretty much understand it all except for position 3 on the 5-way switch. It appears that in position 3, North-start, North-finish, and South-finish all go to the output. And South-start goes to ground. Does this effectively make the north coil inoperative? For a coil split, I'm used to seeing a coil get double-grounded (like they show for switch position 2) and that's why I'm confused.

It depends on which coil is being shorted out (the pickup is being split, a coil is being shorted [or in a better case, not connected]).
In this design, humbucker coils are probably being selected to effect humbucking combinations with the other pickups. Of course, this infers that the Middle pickup will have South magnetic polarity and that the Neck pickup will have North magnetic polarity.
