I'm running a single coil Strat pickup and a Gibson 498t into a three way switch. The 498t is quite noticeably louder. How can I even out the volume? I tried putting resistors in to even out the resistance (Gibson approx. = 14.25, Fender approx. =7) but it didn't do a damn thing.

You'll have to use separate volume controls or a blend pot. These pickups have significantly different output levels and tones.
Strat SC 100 to 120 mVAC
Gibson 498t 250 to ?350 mVAC. (Which BTW is a ceramic magnet HOT pickup.)
What guitar are these in?

BTW, a hearty welcome to ratkinson! I hope your wuest toward guitar wiring wholness finds completion here And BTW, listen to ChrisK, it'll do ya well. One thing I do have to add is that it might be possible to balance the pup outputs internal to the guitar, but the HUGE difference in output will make it supremely difficult without muddying up the humbucker, which none of us want I'll agree with ChrisK that adjustable volumes for each pup would do you well. Once you've got that done (if you decide to), maybe we could get treble bleeds on those volumes so as to be able to balance the outputs without muddying the tone.

These are in my MIM strat. It's an American standard strat pickup.
