As far as capacitors, the value you select is largely a matter of personal preference (obviously, within certain limits). What value cap do you have in there now, and what about it makes you want to change it?
The capacitor I have in there now is a .047. There is nothing that makes me want to change it I just thought maybe I should if I change the pot?
Same with the pots. If you want to knock off a bit of brightness, the 250K/500K setup will do that. If you want to knock it back quite a bit, then the 250K/250K option would do a bit more. If you only change one of the 2, you may notice only a fairly subtle effect.
I was only looking to knock off a bit of brightness to try something a little different.
For some reason, 500K push/pull pots are easier to find than the 250K ones- the 250s are out there but they're a bit more work to hunt up.
One of the local stores where I am at has a Fender 250K push pull, but I think I am just going to try changing the tone pot for now.
