Thanks guys, I am a new member but I have been using the GuitarNuts schematics for a long time with my guitars.
You will want to take a look at ChrisK's Three single coils and the "S-None" switch thread from our general schematics page. There are several iterations of this design using the Shaller Megaswitch, but if you scroll all the way down, you'll find one for use with a regular Strat "5-way" switch.
ChrisK's design uses a single DPDT pot to sort of emulate the hard-to-get S-1 switch. Other push-pulls on the tone pots are used for phase reversal, but these could be easily eliminated.
This design seems to be pretty much what you're lookig for. With the push/pull down, you get regular Strat 5-way operation; with it up you get series combos and "bled through a cap" tones. The series combos of B*M and N*M you get at positions 1 and 5 on the Strat switch, not at 2 and 3 as on your wish list; positions 2-4 give series combos with the cap bleed.
Take a look and let us know whether that's what you had in mind. I assume this design has, at least, been implemented by ChrisK, and perhaps by others as well.

Am I right in thinking that I can just leave out the "special" cap on the DPDT vol pot? I intend to use standard orange drops on both tone pots, and I just can't think of any kind of special cap that I would really want to use.
Sure, you can leave out the cap there. It'll cause you to have some redundant positions, but doesn't sound like you're too worried about that. It would allow a slightly smoother switch between N+M (for example) and N*B, in that you'd just have to pull the switch to get to series mode.

Sure, you can leave it out, however, the middle position in series mode will be a dead position without the cap. It may generate some hum.

It's completely unrelated to the tone controls or their cap(s). It's NOT "any kind of special cap", Fender just calls their cap in this position "special". Typically, it's a 0.022 uF film cap.
What it does is shunt across either the bridge or neck pickup when either is in series with the middle, and gives two distinct additional voices compared to just the bridge and middle or middle and neck in series.
The Fender SSS S-1 guitars have this cap in there for a reason. They generally do not waste money on things that have little effect. The tonal difference is sort of halfway between a single coil and series coils sound, but it is quieter than a single coil alone.
And, the value can be adjusted according to taste.
