Hey all, All the wiring diagrams that I have looked over say to ground the to the volume pot. Does that mean only to the volume pot for a reason, or can it be to any pot? Does it really make a difference? Thanks

You can gather your "ground" wires anywhere you want. None of these are actually grounds until they get to the amp chassis, but they are all ultimately going to the same place.
You do want to ground the pot cases if possible for shielding purposes.
It's a good idea to try to avoid redundant ground paths - where you can get from one point to another via multiple routes (wire or foil or whatever) - though we have some question around here on how much of an issue those "ground loops" really are in the context of passive guitar electronics.
I personally avoid soldering to the back of any pot for practical purposes (didn't I just type that same sentence somewhere recently?) - it takes a powerful iron, a steady hand, nerves of steel, and (I think) a heaping dose of luck. Oh, and half of my guitars just plain don't have pots...

Neither of my strats have pots. They've been replaced by rotary switches. Eventually, everything goes straight to the jack.
