I suppose you just mean any old mains extension cord. It sounds as though while there is a minimum gauge, there is no real maximum in any given situation, so the bigger, the better.
Do the cords you use have an earth wire running through them too? Presumably you would just leave one in there, separate out two wires and solder away?

Lamp cord, at least in the US, is a 2-conductor. But certainly if you have 3-conductor, just ignore the ground and wire away.
You're right, the maximum dimension is not an issue. Remember all the hype over "monster cable" for your stereo speaker connections?
