I think understand the difference between Audio and Linear pots. If I am getting it right, Audio increases in sort of a scoop shape, but sound like they increase evenly. Linear increase in a straight line, but sound like they get loud very fast. Is this correct?
Also, I've heard people say they prefer Audio for this, or Linear for that (tone and volume-wise). Which is it? I am hoping to have my build-a-strat done by the spring, because there are a couple shows I would like to play with it.

That scooped shape is a logarithmic curve. Just as your vision is biased towards the blue end of the spectrum, and relatively deficient at the red end, your hearing is similarly biased. A log curve sounds more "natural" to our ears as it progresses.
I agree with DF, but this is largely a matter of personal preference- mine just happens to be the same as his! I will add that, if you're using a pot for blending purposes, use a linear pot.
