Wow guys... just realized that I never responded back to this to say thanks again. Sorry about that, and like I said... thanks ALL! I've only started wiring this up (started a new job this week, so it's been busy). I'll let you know if I ever get it working properly. One thing I'm already noticing I'm having issues with is getting a good ground connection to the outside of the pots, so if anyone has any tips on that, I'd appreciate it.

You need to roughen the backs up a bit with an emery board or thin file. Don't allow material to fall inside the pot if it's a non-sealed unit.
Then a little wipe of alcohol to clean any finger grease off, and then you should get good stickage.

Those tips are good, but sometimes a solderimg iron just doesnt put out enough heat. My favourite old 25W one that I had for 35 years could never quite get a pot hot enough to get a good solder joint. It failed totally recently , and I got a new 15W one, but with an 80W 'turbo' button for a quick burst of hell. It easily gets a good clean solder pool, quickly, which is what you want.
If you can't get it to work, you can put a washer around the pot shaft and solder to that.
