I just picked up a Jackson on a whim at my local GC for $210, a steal if I say so myself. The necks feels like about what you might expect from a Fender-owned company making a seven string; a nice round profile, and a fretboard that's roomy without being unmanageable.
On a whim and after a few brews one afternoon, I decided that two humbuckers and a Gibson style three-way wasn't enough for this guitar. I was able to split the coils, but knew they wouldn't sound the same as a true single-coil, so I broke out the dremel tool and installed one of my old Schecter's Duncan Designed single coils in the middle position, and turned the tone knob into a volume knob, dedicated to the single-coil.
I must say the added mid-sc adds a new degree of useability to the guitar, though switching from a single-coil to a humbucker arrangement is a bit tedious, as you have to turn both knobs all the way. I do enjoy the Gibson style switch though.
With one more Gibson switch and a couple of dual-concentric knobs, here's my plan.
I'll have it wired up a bit like a p-bass, with one volume/tone concentric controlling the single-coil's output and one volume/volume output controlling the humbuckers. The Gibson toggle in it's existing position will be rotated so that each position points to the concentric stack that is actually going toward the output jack.
A second Gibson style selector will be installed in the upper bout, to determine which of the 'buckers will be active.
I see this design as being very useful and practical, and straightforward. Anyone have suggestions/comments?

sounds like you mostly know where you are going already on this one. you'll need to decide whether the volumes should be interactive, or independent, and whether you want linear or log taper for the volume pots. the switch on the upper bout to select the HBs could be a G style 3-way, or a mini-toggle on-on-on. for that matter, if you go the mini-toggle route, you might locate it near the other controls. cheers, unk PS. glad to see a new avatar, rather than the blank space.
