I have a set of the GFS premium vintage alnicos. They are like those, but lower output and around 5.5k I believe. I'm very pleased with them. They were shipped efficiently from the US to Australia, at a very good price. They have a good balance of highs and lows. The construction is simple, but good quality.

I've used several of the overwound versions you show. They are musical and work well enough.
They do not to my ears sound precisely like a set of strat pups. Of course what is the definitive reference strat pup?
They work very nicely in a design like John's ToneMonster II. They get very growly and meaty when combined in series. The Bridge and Mid combo in series is close to a humbucker at the bridge in a Strat, with a little more "air" in the sound.
I would recommend a tone bleeder circuit in your volume control(s). With that you can roll the volume down and get closer to a vintage sound, making them very flexible.
I also put a couple in a SSH that was top-routed the shape of the single coils and -hums. In that application, the fiber plate that forms the bottom the bobbin was too large for the rout. I could not really trim it as the hair thick coil wires are very close to the edge of the plate edge. So if that is your application, beware.
