So both wires that are attached to my guitars output jack came off. Also the white wire became way too short so i "spliced" another wgite wire onto it making it longer. Not sure if thats an ok thing to do but I digress.
So I have soldered it multiple times and yes my guitar plays but the noise is terrible and very very noticeable when i stop playing, when i put my hand on the guitar cable or the metal plate covering the inside where output jack is it goes away.
I would so greatly appreciate any help

Sounds like bad grounding to me. I am shocked the Wire from the Volume to the Jack KEEPS coming off. I am thinking . NEW Wire from Volume to Jack for Signal and Ground (make the Ground go around the Signal wire) put a bit of a spring in it SLUG tape in the Jack HOLE coming all the way up and just make it go over the Edge so has a better connection with the JACK Socket Case. Ground Wire to TWO of these and Screw in Jack Socket Case so the screws go via these My HOPE is that This will Seal the Jack Socket in a Ground Case. You as a HUMAN will have some CHARGE (as the MATRIX Found out Humans make good Batteries too) Also the Tremolo needs grounding too (i think some use a Electric Cap .. thinking 330uF 24-50v .. think someone will correct that and say why they use that) any thing with METAL Case (Switch, Pots etc) should be GROUNDED outside

Your symptoms sound like you might have reversed the connections at the jack, so check that first. If that is not the case, then your attempted splice might be the problem. A few questions, though:
Is this a Strat-style guitar with the "canoe" jackplate?
Did you shield the cavity under the jackplate?
You might try taking the jackplate off and leaving it hanging, then plug the guitar in and see if you still get the noise- if not, something is shorting out in that area when the plate is installed.
Oh, and:
Hello and Welcome to G-Nutz2!
