I'm in the process of installing a set of CS Nocaster pickups. My question is the neck pickup has 3 wires coming off of it. White, Black, which I know where to connect, but what's throwing me off it the third wire, a Green one. Where does it connect to?

Ihave no experience with this pickup but I did install some fender lace golds that had 3 wires and the extra turned out to be an extra ground. Coul be the case here, Although keep checking peace Damian

damian's probably got this right.
the green wire is PROBABLY connected to the metal frame of the pickup and not to the coil. its intended to be connected to ground.
the white and black are PROBABLY connected to the coil and neither one is connected to the frame or shield. this allows you to change phase by exchanging the connections through a switch. since the sheild or frame is already connected to the black in some pickups, changing phase is not an option.
spend 5 bucks on a volt/ohm meter if you don,t already have one. they're useful to have around.
measure resistance on like a 20k ohm scale.
between black and white you'll read 7~8 k ohms.
between green and the other wires you'll read an open circuit (same as meter probes not touching anything)
between green and the frame and or shield you'll read about zero (no it doesn't have to be exact, after all, whats a few ohms between friends?)
if it checks out as above connect the green to ground and you already know what to do with the other 2.
how'd it work out?

I wired it up without the green attached, plugged it in and all was fine. Note, I shielded all the cavaties as this guitar is new. Both PU's worked with no hum. I touched the green to ground and they still worked. There still was no difference as far as hum was concerned. All is well.
