I sheilded by Scratchplate (on my Strat) by spraying it with 3M glue and adding the heavy Duty aluminium foil. Only trouble is, as I'm screwing the pickup height screws back up, the springs/rubber tubing is rubbing away the foil. I'm concerned I might have the same problem when I tighten the pots up, that it will tear the foil.
Does the foil only need to be continuous directly over the control cavity? is it ok to have some rips or tears in the foil around the pickups? Or am i going to have to re-foil the pickguard?

rips and tears are not fatal as long as you don't have any large sections that aren't connected to ground. to minimize the chance of ripping try some smooth flat-washers between the springs/rubber tubing and the foil.
i'd be more concerned with small bits of foil coming loose and wandering around in the control cavity until they found a home say, between the lugs of your volume control or somewhere equally hideous. that WOULD be a show stopper.
