Just picked up an Affinity Squier Strat for $40. What I want to know is, IF I was looking to replace the whole pickguard assembly (please, no judgement of whether I should or not) , the question is, are there different sized pickguards for different standard sized Strats, or is a regular Strat a different size than an Affinity - Bullet - whatever? Or can I just go on ebay, pick one and replace it - no problem? I've never done this before, so any advice is appreciated. Thanks.

There are about 3 types mostly found, 8-holes, 11-holes vintage, 11-holes modern. Among the 11-holes types, you will find two variations which have to do with the placement of the screws. If you find a pickguard that has the exact same hole placement as yours, again, you might find small differences and a little bit work to fit, if it doesn't exactly match the neck heel, or around the bridge. Using a file/sandpaper, and/or a router should not be hard to fix. (just don't overdo it).

That's true of Fenders, not necessarily of Squiers.
Yes, and it's worse than even that- not all the Squiers are alike, the Bullets are different than the Affinity.
If you look at Warmoth's custom pickguard pages, they want you to send a tracing for Squier pickguards, as there are so many variations. These are variations in dimensions, not just in screw placement.
As GD suggests, you can usually shoehorn a regular Strat pickguard onto one of the Asian clones, Squier or otherwise, with a bit of reworking. I've ruined a few pickguards that way, so go slow and be careful. The problem is, trim a bit from the neck pocket to make it fit, now your horn is shifted over a bit. Trim around the bridge, it shifts the cavity portion over. Expect that all the screw holes will have to be redrilled.
The ones I've done look pretty good from 5 feet away, just don't inspect too closely.
To get one that just bolts on without any fitment issues, you could have one made up by Warmoth (approx. $25, depending on material) and then just transfer the wiring harness from your prewired pickguard over to the new guard. That's just nut and screw work- no drilling, no soldering needed.

Having made many a plastic piece for my employ over the years, I like to use one of these: A General Tools 481 Deburring Tool. This lets me get the shape to fit, and then I can clean it up/polish it afterwards with the dremel.

To sort of finish the thought, all of the prewired pickguards I've seen have been made to fit real Fender Strats, whether 8-screw or 11-screw, vintage or modern. I'm not aware of any that fit a Squier (or, I should say, that are advertised to fit a Squier). It's easy to see why that is- that's where the market is. A guy looking to spend money to replace pickups, pots et al. to get his guitar more to his liking has already progressed in his playing beyond the Squier market- he's got a real Fender already. The kid just starting out with a Squier will keep it more or less "as is"- if he sticks with guitar, eventually he'll upgrade the whole guitar and move up to a Fender. There is a relatively small group of people who are willing to take a $150 Squier and drop another $150 (or more) into it to upgrade the electronics. These people can all be found here.

The GNutz theme song: "Cheap Bastards are We". Have you set a budget for this project? I'm going up to around $2,000 AUD on this. Hmmmm... I'm having a problem reconciling those two statements, anyone wanna help me out here?

....the term "AUD" ought to tell you something.. What, that's just another spelling for "odd", right? Which is what I said in the first place, mate. And Adam, if yer reading this, I don't think you're nutz for spending so much money on one axe, but you durn well better be posting pictures along the way as you build the thing, and sound clips after it's finished! (Sorry for the slight hijack, daddio.) sumgai

Ha! ...right.. ...the downside of having a Government that's still working, is that we're sometimes not too keen about what they're working on....

On the other hand, sending the government to vacations is an effective measure against corruption (balkan joke!)
