When you say you want a selection of series and parallel, there are 3 pickups. There are 17 possible combinations of three pickups in series or parallel. You certainly can't have all of them with just the switches you have.
You have one P/P pot. This has a DPDT switch, which can be used to switch any one pickup into series or parallel with another pickup. or with whatever is selected on the 5-way switch.
The 3-way toggle may or may not be useful. It depends on what type of switch it is. It needs to be a double pole switch ("DPDT") to be able to switch between series and parallel. If it's like the regular Gibson-style toggles, it won't help with series/parallel switching.
From what you're saying, I would suggest as follows:
Normal Strat volume and 2 tone controls
5-way switch selects the standard Strat selections- N, N+M, M, M+B, B
P/P on one tone pot puts the bridge pickup in series/parallel with whatever is selected on the 5-way switch.
