you won't be dissipating even 1/8 watt in a passive guitar so go for whatever is cheapest. 1/8 watt is tiny if space is a concern. 1/4 watt is fine. carbon film/metal film. whatever's cheapest

Since the price difference is so small, I’d go for metal film because the tolerance is tighter. Not that it makes enough difference to matter in guitar work, but you might want to use them for other things where it might. 2W is way more than you need, but it won’t hurt anything. They’ll just be a little bigger (physical dimensions) than absolutely necessary, but unless you’re populating a really tight pcb, they might again cover you in more situations.

If you are after the 0.68nF from the recent volume switch module, you might find it more commonly referred to as 680pF Any type is fine. (note, it's not the same as 0.68uF)
1000pF = 1nF = 0.001uF (uF should be with Greek mu symbol, for microFarad)
